Tex Mex Baked Beans

Contributed by Backyard Bash customer Robert Frazier of Pyro Pigs BBQ. Want to put a new twist on baked beans for your next BBQ? Try this recipe for Tex Mex Beans developed by Robert for his Pyro Pigs catering business.
Ingredients:
1 can Bush’s Baked Beans
1 can black beans, drained
1 can Rotelle tomatoes
4 slices bacon, crumbled
1/4 cup brown sugar, packed
1/2 teaspoon coarse black pepper
1/4 cup black pepper
1/4 cup red onion, finely chopped
1/4 cup green bell pepper, finely chopped
salt to taste
Combine ingredients, bake one hour covered in a 350 degree oven, remove lid and cook 10 minutes or more until desired thickness. Can add pulled pork or brisket in place of the bacon.
